Greenheart Scones

Why not have a go at cooking these wonderful tea-time (or anytime!) scumptious Scones!

Ingredients for 16 - 20 scones:

Using a ceramic cup (300ml) as a measure.

4 Cups of organic integral flour
1 cup of organic brown sugar
1 cup of sunflower oil (organic if possible)
1 cup of chopped walnuts
1 cup of sultanas
1 cup of Soya milk (non GM)
1 happy chicken egg (from free range chickens)
2 tablespoons of cinnamon powder
Sunflower seeds to decorate
1 heaped teaspoon of baking powder

Method of preparation:

Light or switch on oven and set to high heat in order to warm it thoroughly whilst preparing the scones for cooking.

Mix the flour, baking powder, cinnamon, sugar, oil, nuts and sultanas in a clean round plastic washing up bowl. Beat the egg with the cup of Soya milk and add this to the mixture and using either an electric mixer or a fork, blend all the ingredients until well mixed together.

Flatten the mixture out on the bottom of the mixing bowl until about 2cms thick all over, then using a tall straight drink glass (tube), begin cutting the scones out and placing them on a well oiled steel baking tin. In order to avoid the scones sticking to the glass, dip the glass into some flour between each cutting. Once all the mixture is cut into scones, paint the tops with the rest of the milk/egg mixture and sprinkle some sunflower seeds on the top of each one for decoration. Paint the tops again with more egg/milk mixture to ensure they are well stuck on there and place in the upper part of the oven. Cook on high for about ten minutes to rise the mixture then lower the heat to almost minimum and cook for a further 15 to 20 minutes until golden brown.

Remove the scones from the oven and make some tea.
Eat warm or cold, also with butter for that added rich flavour!

They can be stored for up to 4 days in airtight container without loosing any quality, or frozen for future use, then reheated before eating.

Note: Any kind of nuts or fruit can be used in this recipe – almonds, hazelnuts, dried figs, apricots, dates etc. Also try adding chocolate chips for a different taste!
