Greenheart Apple Crumble
By popular demand here is the recipe for our delicous Apple Crumble pudding, served to the public every Sunday at our open day at Casita Verde.
Ingredients for 25-30 portions:
3kg organic apples
1kg organic integral flour
200gr organic rolled oats
250gr organic integral sugar
200ml sunflower oil (organic if possible)
100gr sunflower seeds
3 tablespoons of cinnamon powder
Preparation:
Peel, core and cut apples into small pieces, then cook with a little water until soft.
Using both hands, rub the flour, oats, sugar, oil and cinnamon together in large mixing bowl until thoroughly blended.
Place the cooked apples into the bottom of a suitable deep earthenware baking dish. Spread the crumble mixture on the top of the apples but do not push down. Decorate the top with sunflower seeds and place in the middle of a warm oven. Cook for around 45 minutes at 350 degree Fahrenheit (ca. 180 degree Celsius) until the top is golden brown.
Serve warm with vanilla ice cream, or a cold sauce made from fresh yoghurt, brown sugar and vanilla essence. (Can be served with English style vanilla flavoured custard).
For non dairy version, use a pre-prepared vanilla sauce made with Soya milk and sold in many health food shops.
Note: This recipe can also be made with apricots, fresh figs, pears, rhubarb, bananas or any other similar fruit in season at the time. However, when using fruit that is sweeter than apples, remember to use less sugar in the topping to avoid the pudding being oversweet!
