Cheese, Onion and Tomato Quiche
Recipe for making one medium quiche.
Ingredients:
For the Pastry:
400mL Integral Flour
Handful of Provincial Herbs (dried)
1 tbsp Salt
½ Cup Olive Oil
Water (it’s a judgement call how much)
For The Middle:
2-3 Large Onions
1 Large Tomato
6 ¨Happy Chicken¨ Eggs
200g Local Cheese
½ Cup Milk or Soya Milk
½ tbsp Salt
½ tbsp Pepper
Handful of Sunflower Seeds
Preparation:
Let’s Make The Pastry Part: Mix together all the pastry ingredients except for the water. Next, add water little by little until you form and elastic dough that can be rolled out. Sprinkle flour on rolling surface and roll dough out larger than the size of your dish so that you can form a crust with the edges. Brush pan with oil and fit the crust into it. The pastry part is relatively thin to allow for quick cooking.
And Now The Centre: In a saucepan, on medium fire, sauté diced onions until they are soft. In a bowl combine eggs, milk, salt and pepper. Using a hand mixer or a whisk, beat until the mixture is bubbly. Add onions to the pastry. Grate cheese and cover the onions. Slice the tomato and arrange on top. Slowly pour the egg mixture over and finally, sprinkle the handful of sunflower seeds on top. Bake at 350°F for about a half an hour until the quiche is firm and slightly brown on the top.
Garnish with a salad and enjoy your lunch!
Variations: You can really add whatever you like to a quiche. Another good one is steaming Swiss chard, broccoli and zucchini for the centre with just a bit of cheese on top. Mix it up and work with what’s in your fridge.
